Easy Vegetarian Mediterranean Meal Prep Lunches

We’ve been trying to get more creative with our lunch choices, and this week we’re trying out a ‘bento box’-style meal prep situation with some of our favorite Mediterranean flavors. We chose to include healthy, nutritious choices that also taste amazing together. If you’re really feeling it, you could make your own hummus and falafel, but we chose to purchase pre-made falafel and hummus at Trader Joe’s because we love their versions so much – and let’s be honest, to keep meal prep Sunday as easy and no-cook as possible.

Mediterranean Meal Prep Bento Box

Prep time: 20 minutes (not counting 3 hour yogurt strain)
Servings: 6 lunch-sized portions

Ingredients
1 tub of Mediterranean hummus – we love this one from Trader Joe’s
1 tub filled with your favorite olives
8 oz. light feta
3 whole wheat pita (cut in eighths)
1 bag of frozen falafel – we used the falafel from Trader Joe’s
7 oz. tabbouli – Trader Joe’s has a great one

Tzatziki ingredients

2 cups plain Greek yogurt 
1 cup cucumber (shredded with skin on)
2 tablespoons lemon juice
2 garlic cloves (minced)
1 tablespoon dill (chopped)
salt and pepper to taste

Tzatziki Instructions
Strain Greek yogurt using a cheesecloth or paper towel for 3 hours to remove unnecessary moisture.
Sprinkle a pinch of salt onto the cucumber (shredded). Let the cucumber sit in a cheesecloth or paper towels for a few minutes to remove the moisture, and then wring out more of the moisture.
Mix the strained Greek yogurt, de-moisturized cucumber, dill, garlic, and lemon together. 
Season with salt and pepper to taste.

Assembly Instructions
Use a spoon or ice cream scoop to divide tzatziki, hummus, and tabbouli between six glass meal prep containers.
Add in as many olives as you desire – we did a spoonful. We used olives with pits, but will be using pitted olives for future lunches for ease.
Cut feta into cubes and add to container.
Cook frozen falafel (in oven or microwave) and place 1-2 in each container.
Cut pita bread into eighths and place 3-4 in each container. Essentially you’ll have 1/2 or less of pita bread per serving.
